I grew up where any vegetable can be stuffed and cooked! From Zucchini’s, cucumbers, lettuce, peppers, tomatoes, mushrooms, squash, eggplant… anything that is edible basically. Tonight I stuffed colorful peppers, mushrooms and tomatoes.
It’s really simple: you just core out the insides or take out the stems of the vegetables and fill with seasoned and sautéed ground lamb or beef (or turkey) (there are many veggie stuffing options too), onions and pine nuts. Add tomatoes sauce, season some more and cover and bake until peppers look fully cooked.
