Homemade Granola to Make Again and Again
Often during the week, I find myself rushing through the morning – boiling a couple eggs for my kids or pouring a bowl of cereal. Having foods that are healthy and pre-made is always a treat. I decided to make homemade granola and store in mason jars and have readily available, whether it’s for breakfast with yogurt and fruit, or as a mid-afternoon snack. What I love about this recipe, is you can really use any type of dried fruit, nuts, seeds and spices and personalize it to your own taste and flavors. You can also use agave syrup, honey, or maple syrup based on how you like to sweeten the granola. I chose to flavor it with vanilla extract but almond extract or any other flavor would be delicious too!
I was surprised when even my 18 month old LOVED it! She eats it straight out of the jar. It is the perfect bit of crunchy, sweet, chewy, and filling! My husband mixes in some chocolate chips and makes it a topping for frozen yogurt. Making it is super easy and quick!
Homemade Granola Recipe
4 Cups Oats
1/2 Cup Seeds (I used Raw Pepitas)
1/2 Cup Nuts (I used Sliced Almonds and Chopped Walnuts)
1 Cup Shredded Coconut
1/2 Cup Dried Fruit (I used dried cranberries)
1 Tbsp Spices (I used a mixture of cloves, cinnamon, and cardamom)
1/2 Cup Melted Coconut Oil
1/4 Cup Honey
1 1/2 tsp Vanilla Extract
Preheat oven to 350. Mix dry and wet ingredients together and spread on a cookie sheet lined with parchment paper. Bake for 15 minutes, then mix. Bake for 15 more minutes or until golden brown.
